Leiths Certificate in Food and Wine

Westonbirt is privileged to be one of a small number of schools in the UK offering the Leiths Introductory Certificate in Food and Wine and were one of the first schools to offer this course. The course runs over 5 terms and focuses on professional standards of food preparation and presentation and students prepare several dishes most weeks.

A wide range of skills is covered, including bread making, soups, sauces, meat and fish, pastries and desserts. Each pupil receives their own set of professional cook knives and full chef’s kit including Leiths apron & hat. During the course, visiting Leiths chefs conduct assessments and share their skills. The wine appreciation course is taught by a Master of Wine. Students also take a food hygiene qualification.

The course involves practical assessments, theory examinations and coursework. Once a year the girls prepare, cook and serve a gala dinner in our historic library to an esteemed gathering of invited guests. Successful pupils may use their certificate to seek both short and longer-term job opportunities through the Leiths List – a job agency solely for Leiths graduates. Or students may choose to continue their culinary studies at Leiths School of Food & Wine in London, continuing to study and adding on the intermediate and advanced courses will equate to a full Leiths Diploma.
